Ingredients Spicy Gingerbread

150 g maple syrup
75g brown sugar
50g butter
½ tablespoon cinnamon
Pinch of ground cardamom
Pinch of ground anise
Pinch ground cloves
50 dried figs
1 lemon
1 egg
100 g fine rock sugar (you get this in tea specialty stores)
300 g flour
1 packet of baking powder

1 egg yolk
100 Shelled Almonds

Method Spicy Gingerbread

1. Heat syrup, sugar and butter while stirring until a smooth mass is obtained. Set aside to cool.

2. Mix spices, finely chopped figs, lemon zest, egg, rock sugar, a little bit of the flour and the baking powder. Add the remaining flour, and knead the dough.

3. Roll out the dough 1/2 cm thick on a floured surface, and cut into equal squares, so that you will get 60 gingerbread.

Preheat the oven to 175 degrees, gas mark 2.

4. Put gingerbread squares on a baking tray lined with baking paper. Blend egg yolk with a tablespoon of water and spread on gingerbread.

5. Cut the almonds in half lengthwise. Decorate the squares with four of the halved almonds (press them into the squares, but just lightly).
