Go Hiking in the Dolomites and Eat Kaiserschmarrn



I love hiking and taking photos in the Dolomites and all that but what I also like is to sit down and eat. Stopping for lunch at one of these alpine huts I recommend you eat Kaiserschmarrn.

-Kaiser = Emperor.

-Schmarrn = A Schmarrn in Bavarian and Austrian cooking is a dish in which during the preparation the initial mass of the dish is roughly divided into small pieces. In Bavarian, everything that appears to be meaningless is described as schmarrn (nonsense).

There are a few stories of how Kaiserschmarrn came into this world, and I like this version a waiter told me, it goes well with hiking and being in the mountains.


A peasant family unexpectedly received a visit from the Emperor Franz Joseph (the husband of Sisi), who was surprised by bad weather while in the mountains. The peasant woman had only eggs, milk, flour, and raisins at hand, and out of necessity made the first Kaiserschmarrn ever. The Emperor praised the dish and she said it was only a schmarrn. Franz Joseph declared the dish from then on to be a Kaiserschmarrn (emperor's schmarrn).


Receipe Kaiserschmarrn

Ingredients

30 g raisins
2 tbsp. Rum
4 eggs, separated
30 g of sugar
3 tbsp vanilla sugar
375 ml milk
125 g flour
40 g of butter
Icing sugar
Salt.

Method

-Put raisins in a small bowl and cover with rum, let them soak for 30 minutes.
-Combine egg yolks, sugar, salt and vanilla sugar in a bowl.
-Gradually add milk and flour, and the raisins.
-Beat egg whites; fold mass under the dough.
-Heat butter in a frying pan, add the dough and cook at low heat until the base is slightly browned.
-Flip pancake until it is easy to tear into small squares.
-Serve on plates and sprinkle with icing sugar and homemade plum compote.

Enjoy. Kaiserschmarrn is so very delicious.
