Slow Travel - How to make apricot jam in the bush?

While living in Australia I never made my own jam. I had one apple and one lemon tree in my garden, hence I was very occupied with preparing everything made from apples and lemons. Over the years I became a 'wizard' in making lemon curd and in hindsight, there is actually one big negative about it, I can never again buy ready-made lemon curd.

Last summer I totally fell in love with making my own jam. And it is so easy that I have to share it with you. You can also make your own jam over a campfire when in the bush (it is a dream together with self-made bread). If you start straight away you are going to have a jar of delicious apricot jam within twenty minutes.

You need: Apricots and sugar.

Preparation Apricot Jam


Wash apricots, cut them in quarters, place them in a saucepan, add sugar (to your own taste), stir, turn up the heat and boil. Lower the heat after a few minutes and let it simmer for 10 to 15 minutes. Pour jam into a clean jar. Keep refrigerated and eat within a few days.
